Preparation Directions
1. Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions. Once cooked, mix rice vinegar, sugar, and salt into the rice and let it cool.
2. Prepare the Cucumber
Cut the cucumbers in half lengthwise and scoop out the seeds to create a boat for the filling.
3. Prepare the Sriracha Mayo
In a small bowl, mix together the Sriracha and mayonnaise until well combined.
4. Prepare the Ahi Tuna
Dice the Ahi tuna into small cubes and set aside.
5. Assemble the Cucumber Boats
