Prepare Ingredients

Ensure that the shrimp are peeled and deveined, cherry tomatoes are halved, and garlic is minced. Drain the capers and set aside.

Chop Parsley

Chop the fresh parsley and set aside for garnish.

Cooking

Heat Olive Oil

In a large skillet, heat the olive oil over medium heat until shimmering.

Sauté Garlic

Add the minced garlic to the skillet and sauté for about 1 minute, or until fragrant.

Add Shrimp

Add the shrimp to the skillet and cook for 2-3 minutes, turning occasionally, until they turn pink and opaque.

Incorporate Tomatoes and Capers

Add the halved cherry tomatoes and drained capers to the skillet. Stir to combine and cook for an additional 2 minutes.

Deglaze with White Wine

Pour in the white wine, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for about 3-4 minutes, allowing the sauce to reduce slightly.

Season and Garnish

Season with salt, black pepper, and red pepper flakes (if using) to taste. Remove from heat and sprinkle with chopped parsley.

Serve immediately with lemon wedges on the side for squeezing over the scampi.
