    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash the baking potatoes thoroughly and poke several holes in each potato with a fork. Rub the potatoes with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.

    Cook the Steak

    In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the steak pieces and sprinkle with blackening seasoning. Cook for 4-5 minutes until browned and cooked to your desired doneness. Remove from heat and set aside.

    Make the Smoked Gouda Sauce

    In the same skillet, lower the heat and add butter. Once melted, add the heavy cream and let simmer for 2-3 minutes until slightly thickened. Stir in the smoked Gouda cheese until melted and smooth. Season with salt and pepper to taste.

    Assemble the Loaded Potatoes

    Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut the potatoes open and fluff the insides with a fork. Top each potato with the blackened steak bites, crumbled Gorgonzola cheese, and drizzle with the smoked Gouda sauce. Finish with a sprinkle of chopped chives.
