    Prepare the Croutons

    Preheat the oven to 375°F (190°C). Cut the sourdough bread into cubes. Toss the cubes with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet and bake for 15-20 minutes or until golden and crispy. Let cool.

    Fry the Capers

    In a small skillet, heat 2 tablespoons of olive oil over medium heat. Add the capers and fry until they become crispy, about 3-4 minutes. Remove and drain on paper towels.

    Make the Parmesan Crisp

    Grate the Parmesan cheese and place small mounds on a lined baking sheet. Bake in the oven at 375°F (190°C) for about 5-7 minutes until melted and golden. Let cool until firm.

    Prepare the Salad Dressing

    In a small bowl, mix together the minced garlic, lemon juice, 2 tablespoons of olive oil, salt, and black pepper to taste.

    Assemble the Salad

    In a large bowl, chop the romaine lettuce. Add the croutons, fried capers, and pink peppercorns. Drizzle with the dressing and toss gently. Plate the salad and top with the Parmesan crisp.
