    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrot, and celery. Sauté until the onion is translucent and the vegetables are softened, about 5-7 minutes.

    Stir in the diced butternut squash and cook for another 5 minutes, stirring occasionally.

    Pour in the vegetable broth, and add salt, black pepper, and nutmeg. Bring to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the butternut squash is tender.

    Remove the pot from heat. Use an immersion blender to purée the soup until smooth, or transfer to a blender in batches to blend.

    Return the blended soup to the pot and stir in the coconut milk. Heat over low for another 5 minutes, adjusting seasoning if necessary.
