    Prepare the Texas Toast

    Spread butter on one side of each slice of Texas Toast. Heat a skillet over medium heat and place the buttered side down. Toast until golden brown.

    Assemble the melt

    On the unbuttered side of two slices of toasted Texas Toast, layer shredded brisket, a generous drizzle of Carolina Gold BBQ sauce, and a slice of smoked Gouda cheese.

    Top and cook

    Place the other two slices of Texas Toast on top, buttered side facing out. Cook in the skillet until the bottom is golden brown and the cheese begins to melt, about 3-4 minutes.

    Flip and finish

    Carefully flip the sandwiches and cook the other side until golden brown and the cheese is fully melted, about another 3-4 minutes.

    Add onion straws

    Remove the sandwiches from the skillet and top with fried onion straws before slicing in half.

    Serve

    Serve warm with extra Carolina Gold BBQ sauce on the side.
