Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin fries, approximately 1/4 inch thick.

Soak the Fries
Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch. This helps in achieving crispiness.

Heat the Oil
In a deep fryer or a large pot, heat oil to 350°F (175°C). Ensure there is enough oil to submerge the fries.

Fry the Potatoes
Drain and pat the fries dry with paper towels. Carefully add batches of fries to the hot oil and fry until golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove the fries from the oil and drain on paper towels. While still hot, drizzle with truffle oil and sprinkle with salt and Parmesan cheese. Toss to coat evenly.

Sprinkle chopped parsley over the fries for a fresh touch and serve immediately.
