Prepare the Meat
Pound the pork loin or chicken breast to about 1/2 inch thickness. Season both sides with salt and black pepper.

Set Up Breading Station
Prepare three shallow bowls. In the first bowl, place the all-purpose flour. In the second bowl, beat the eggs. In the third bowl, combine the bread crumbs, grated Parmesan cheese, dried oregano, and dried thyme.

Bread the Meat
Dredge each piece of meat first in the flour, shaking off excess, then dip into the beaten eggs, and finally coat with the breadcrumb mixture, pressing gently to adhere.

Heat the Oil
In a large skillet, heat the olive oil or vegetable oil over medium-high heat until shimmering.

Fry the Schnitzels
Carefully add the breaded schnitzels to the hot oil. Cook for about 3-4 minutes on each side or until golden brown and cooked through. Avoid overcrowding the pan.
