Prepare the crust
Preheat the oven to 175°C (350°F). In a mixing bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove and let cool.

Make the cheesecake filling
In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the sour cream and vanilla extract, mixing until well combined. Add eggs one at a time, mixing on low speed until just incorporated.

Bake the cheesecake
Pour the cheesecake filling over the cooled crust. Bake for 50-60 minutes or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

Cool and chill
Remove the cheesecake from the oven and let it cool at room temperature for another hour. Then, refrigerate for at least 4 hours or overnight.

Top with raspberry jam and strawberries
Before serving, spread a layer of raspberry jam over the top of the cheesecake. Slice fresh strawberries and arrange them on top for garnish.
