    Melt the Chocolate

    Chop the dark chocolate and place it in a heatproof bowl. Melt it gently over a double boiler or in the microwave in short bursts, stirring frequently until smooth. Set aside to cool slightly.

    Whip the Cream

    In a mixing bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip. Set aside.

    Prepare the Egg Mixture

    In another bowl, whisk the eggs, granulated sugar, and a pinch of salt until pale and fluffy. You can use an electric mixer for best results.

    Combine Chocolate and Egg Mixture

    Once the chocolate has cooled slightly, fold it into the egg mixture until fully combined. Be gentle to maintain the airiness.

    Fold in the Cream

    Gently fold the whipped cream into the chocolate-egg mixture until no white streaks remain.

    Chill

    Spoon the mousse into serving dishes or cups. Refrigerate for at least 2 hours, or until set.
