Prepare rim
Combine the coarse sea salt (or smoked salt) and ground cinnamon on a small plate and mix. Rub the lime wedge around the glass rim to moisten, then dip and twist the rim into the salt-cinnamon mixture until evenly coated. Set the glass aside.
Cocktail
Build and shake
Fill a cocktail shaker with the ice. Add the reposado tequila (2 oz), mezcal (0.5 oz), apple cider (2 oz), fresh lime juice (0.75 oz), orange liqueur (0.5 oz), maple syrup (0.5 oz), and Angostura bitters (2 dashes, if using). Secure the lid and shake vigorously for 12–15 seconds until well-chilled and slightly frothy.
Strain and serve
Fill the prepared glass with fresh ice (or serve neat in a chilled coupe if preferred). Double-strain the shaken cocktail into the glass using a fine mesh strainer to catch small ice chips and pulp.
Garnish
Garnish with an apple slice or lime wheel slid onto the rim or floated on the drink. Optionally express a lime peel over the drink to add extra aromatics.
Adjust sweetness/smoke
Taste and adjust: if the drink is too tart, add 0.25–0.5 oz more maple syrup; if you want more smokiness, add 0.25 oz more mezcal and stir gently to combine.
