Pour 6 cups fresh apple cider and 1 cup water into a medium saucepan or large pot.

Sweeten

Stir in 1 tablespoon brown sugar and 1 tablespoon maple syrup until dissolved. Adjust sweetness later to taste.

Spices & Aromatics

Add whole spices

Add 2 whole cinnamon sticks, 8 whole cloves, 6 allspice berries and 1 star anise to the pot.

Add fresh aromatics

Add the sliced 1-inch piece of fresh ginger and the zest and both halves of 1 orange (squeeze one half into the pot for extra brightness).

Macerate gently

Bring the mixture to a gentle simmer over medium heat. Once it reaches a simmer, reduce heat to low and cover. Let the cider steep for 20–30 minutes to allow the spices and citrus to infuse.

Taste and adjust

After steeping, remove from heat and taste. If you prefer sweeter cider, stir in an additional 1/2 tablespoon maple syrup or brown sugar. If too sweet, add up to 1 teaspoon fresh lemon juice.
