Wash the garden eggs thoroughly. Trim stems and halve or quarter each egg depending on size so pieces are about 2–3 cm. Set aside.

Chop the onion, red bell pepper and tomatoes. Mince garlic and grate ginger. If using canned tomatoes, measure out 400 g.

Stew Base

Heat oil & sauté aromatics

Place a large heavy-bottomed pot over medium heat. Add the palm oil and allow it to heat until fluid but not smoking (about 1 minute). Add the chopped onion and sauté 5–7 minutes until softened and translucent.

Add the minced garlic and grated ginger, and sauté 1 minute until fragrant, stirring to avoid burning.

Add the chopped red bell pepper and cook 3–4 minutes until slightly softened.

Cook tomatoes

Add the chopped fresh tomatoes (or canned tomatoes) to the pot. Stir and bring to a gentle simmer. Cook 8–10 minutes, breaking down the tomatoes with a spoon until the mixture thickens and the oil starts to separate slightly from the tomato solids.

Seasoning & Garden Eggs

Stir in ground crayfish (if using), crushed bouillon, ground iru (if using), dried chili, sea salt and black pepper. Mix well and simmer 2 minutes to bloom the spices.

Add the prepared garden eggs to the tomato mixture, turning pieces so they are coated in the sauce. Pour in 300 ml of the water or vegetable stock to help create a simmering base.

Bring to a gentle boil, then reduce heat to low, cover partially, and let simmer 20–25 minutes, stirring occasionally. The garden eggs should become tender and start to break down slightly but still hold some shape.

Finish & Adjust

If the stew is too thick during simmering, add additional water or stock in 50–100 ml increments to reach the desired consistency (total water used about 400–500 ml).

Stir in the coconut milk (if using) and simmer uncovered 4–5 minutes more to meld flavors and add creaminess. Taste and adjust seasoning with more salt, pepper or bouillon if needed.

Remove from heat, stir in chopped basil or scent leaves and lime/lemon juice if using. Let rest 5 minutes before serving to allow flavors to settle.

To Serve

Serve the garden eggs stew hot with fufu, pounded yam, boiled white rice, or gari. Garnish with extra fresh herbs if desired.
