Prepare mangoes
Wash, peel, and dice fresh ripe mangoes until you have about 2 cups of mango flesh. If using frozen mango, thaw slightly so pieces blend smoothly.
Blend
Place the diced mangoes, 1 cup cold water, 1 tablespoon sugar or simple syrup, 1 tablespoon fresh lime juice, and a pinch of salt into a blender. Blend on high until completely smooth, about 45–60 seconds. Taste and adjust sweetness or acidity: add more sugar if too tart or a little more lime if too sweet.
Strain (optional)
For a smoother juice, pour the blended mixture through a fine-mesh sieve or chinois into a pitcher, pressing with a spoon to extract as much liquid as possible. Discard solids left in the sieve.
Chill and serve
If not serving immediately, refrigerate the juice for at least 20 minutes. To serve, fill glasses with ice cubes and pour the mango juice over ice. Garnish each glass with a sprig of mint if desired.
Storage
Store leftover mango juice in an airtight container in the refrigerator for up to 48 hours. Stir or shake before serving, as natural separation may occur.
