Prepare guavas

Rinse the guavas under cool water. Pat dry, then cut each guava into quarters. If guavas are very seedy and you prefer a smoother juice, scoop out large seeds with a spoon as you cut; smaller seeds can be removed after blending.

Blend

Place the guava quarters into a blender. Add 1 cup of the cold water and the granulated sugar. Blend on high for 45–60 seconds until the fruit is fully broken down and smooth. If your blender struggles, blend in two batches.

Strain (for smooth juice)

Place a fine-mesh sieve or chinois over a large bowl or pitcher. Pour the blended guava mixture into the sieve and use the back of a spoon or a spatula to press the pulp, extracting as much liquid as possible. Discard the solids (or reserve for smoothies or baking).

Adjust and combine

Add the remaining 2 cups cold water to the strained juice. Stir in the fresh lime juice and a pinch of salt. Taste and adjust sweetness by adding up to 1–2 tablespoons more sugar if desired, stirring until dissolved.

Chill

Refrigerate the guava juice for at least 30 minutes to let flavors meld, or serve immediately over ice for a cooler drink.

Fill glasses with ice cubes. Pour the chilled guava juice into each glass. Garnish with a lime slice and a couple of mint leaves, if using. Serve cold.
