Rinse and measure

Quickly rinse the dried hibiscus flowers under cool running water in a fine-mesh sieve to remove dust. Measure 1 cup and set aside.

Simmer flowers

Combine the rinsed hibiscus and 6 cups of water in a medium saucepan. Add the sliced ginger, cloves, and allspice. Bring to a gentle boil over medium-high heat, then reduce heat and simmer uncovered for 8–12 minutes until the liquid is a deep ruby color and fragrant.

Steep for flavor

Remove the pan from heat and let the mixture steep, covered, for an additional 15 minutes to extract fuller flavor and aroma.

Strain

Strain the hibiscus mixture through a fine-mesh sieve or cheesecloth into a heatproof bowl or pitcher, pressing lightly on solids to extract liquid. Discard solids (or reserve a small amount for compote). Allow strained concentrate to cool slightly (10–15 minutes).

Sweetener & Citrus

Sweeten while warm

While the hibiscus liquid is still warm (but not boiling), stir in 1 cup granulated sugar until fully dissolved. Taste and adjust: add up to 1/2 cup more sugar if you prefer sweeter; alternatively use honey or simple syrup in equivalent sweetness.

Brighten with citrus

Stir in 3 tablespoons fresh lime juice to brighten the flavor. Taste and adjust acidity with additional lime or a tablespoon of lemon juice if desired.

Finish & Serve

Dilute to serving strength

Allow the sweetened hibiscus concentrate to cool to room temperature, then transfer to a pitcher and add 4 cups cold water or chilled soda water to dilute to a balanced strength. Taste and adjust: add more water for a lighter drink, or add a splash of soda water for effervescence.

Chill

Refrigerate the pitcher until cold, at least 1 hour. For faster chilling, pour over a large jug of ice and stir to cool, then discard excess melted ice.

Serve

Fill glasses with ice (about 1/2 cup per glass), pour the chilled hibiscus drink over ice, garnish each with a mint sprig if desired. Makes approximately 6 servings.
