Method

Marinate the Sirloin

    Marinate the Steak

    In a bowl, combine the sirloin steak and salsa verde. Cover and refrigerate for at least 30 minutes to marinate.

Prepare the Vegetables

    Cook the Fingerling Potatoes and Green Beans

    Boil the fingerling potatoes in salted water until tender, about 15 minutes. Add green beans in the last 5 minutes of cooking. Drain and set aside to cool.

    Slice the Cucumber

    Thinly slice the cucumber and set aside.

Cook the Sirloin

    Grill the Steak

    Preheat a grill or grill pan over medium-high heat. Remove the sirloin from the marinade and grill for about 4-5 minutes per side for medium-rare. Remove from heat and let rest for 5 minutes before slicing.

Make the Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together the buttermilk, fresh mint leaves, olive oil, lemon juice, salt, and black pepper until well combined.

Assemble the Salad

    Mix the Salad

    In a large bowl, combine the spring mix, cherry tomatoes, cucumber, fingerling potatoes, and green beans. Toss gently.

    Top with Beef and Dressing

    Slice the grilled sirloin and arrange it on top of the salad. Drizzle with the mint & buttermilk dressing and sprinkle with benedictine bleu cheese before serving.
