Prepare the Fries
While the steak rests, peel the russet potatoes and cut them into thin shoestrings. Rinse the cut potatoes in cold water to remove excess starch, then pat dry with a paper towel. In a large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 3-4 minutes. Remove from oil and drain on paper towels. Season with salt to taste.

Make the Peppercorn Sauce
In the same skillet used for the steak, melt butter over medium heat. Add minced shallots and sauté until translucent. Stir in crushed black peppercorns and cook for another minute. Pour in beef broth and bring to a simmer, reducing the broth by half. Stir in heavy cream and simmer until the sauce thickens. Season with salt to taste.
