Salmon Gravlax Preparation

    Prepare the Salmon

    In a bowl, mix the kosher salt, brown sugar, fresh dill, and crushed black peppercorns. Rub this mixture all over the salmon fillet. Wrap it tightly in plastic wrap and place it in the refrigerator for 48 hours, flipping it halfway through.

    Slice the Gravlax

    After 48 hours, unwrap the salmon and rinse off the curing mixture. Pat the salmon dry with paper towels. Using a sharp knife, slice the salmon thinly at an angle.

    Toast the Bread

    Toast the sourdough bread slices until golden brown and crispy.

    Prepare the Avocado

    While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork, and season with salt and pepper to taste.

    Cook the Eggs

    In a pot of boiling water, carefully add the eggs. Boil for about 6-7 minutes for soft-boiled or longer for hard-boiled. Remove the eggs and place them in ice water for a few minutes before peeling.

    Assemble the Toast

    Spread a generous amount of mashed avocado on each slice of toasted sourdough. Top with slices of salmon gravlax and a halved soft-boiled egg. Season with additional salt and pepper if desired.
