    Once the onions are caramelized, add the white wine to deglaze the pot, scraping any brown bits from the bottom. Cook for an additional 5 minutes. Then stir in the beef broth, thyme, bay leaf, salt, and black pepper.

    Bring the soup to a gentle simmer and cook for 20-30 minutes, allowing the flavors to meld together. Adjust seasoning as needed.
