Beef Tenderloin Preparation

    Season the Beef

    Pat the beef tenderloin dry with paper towels. Season both sides with salt and black pepper.

    Sear the Beef

    In a skillet, heat the olive oil over medium-high heat. Sear the tenderloin for 3-4 minutes on each side until it reaches your desired doneness. Remove from heat and let it rest.

Whipped Potatoes Preparation

    Cook the Potatoes

    Peel and chop the potatoes into uniform pieces. Boil in salted water until tender, about 15-20 minutes.

    Whip the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, and salt. Whip until smooth and creamy.

Bordelaise Sauce Preparation

    Prepare the Sauce

    In a saucepan, add the chopped shallots and red wine. Bring to a boil and reduce to a simmer until the wine is reduced by half.

    Finish the Sauce

    Add the beef stock, thyme, salt, and black pepper. Simmer until the sauce thickens. Stir in butter before serving.

Plating

    On a plate, place a generous scoop of whipped potatoes, top with the sliced beef tenderloin, and drizzle with bordelaise sauce.
