Fermented Tomato Preparation

    Prepare the Fermented Tomato

    In a jar, combine cherry tomatoes, salt, sugar, water, vinegar, and minced garlic. Stir well to dissolve salt and sugar. Seal the jar and let it sit at room temperature for 3-5 days to ferment, then refrigerate.

Crème Fraîche Preparation

    Make the Crème Fraîche

    In a bowl, mix heavy cream and buttermilk. Cover and let it sit at room temperature for 12-24 hours until thickened. Store in the refrigerator.

Beef Tartare Assembly

    Prepare the Beef Tartare

    Finely chop the beef tenderloin and place it in a mixing bowl. Add egg yolk, capers, shallots, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix well until combined.

    Plate the Dish

    On a serving plate, mold the beef tartare mixture using a ring mold. Top with fermented tomatoes and a dollop of crème fraîche. Garnish with chopped mint.

Serving

    Serve with Baguette

    Serve the beef tartare with slices of baguette on the side.
