    Cook the Rigatoni

    Bring a large pot of salted water to a boil. Cook the fresh rigatoni according to package directions until al dente. Drain and set aside.

    Prepare the Sauce

    In a large skillet, heat olive oil over medium heat. Add minced garlic and crushed red pepper flakes. Sauté until fragrant, about 1 minute.

    Add Nduja Sausage

    Add nduja sausage to the skillet. Cook for about 5 minutes, breaking it up with a spoon until browned and cooked through.

    Incorporate Tomato Sauce and Vodka

    Stir in tomato sauce and vodka. Simmer for 5-7 minutes until slightly thickened.

    Add Cream and Fior di Latte

    Lower the heat and stir in heavy cream and diced fior di latte. Cook for an additional 3-4 minutes until the cheese starts to melt.

    Add the cooked rigatoni to the sauce. Toss to combine and season with salt and black pepper to taste.

    Preheat the oven to 200°C (400°F). Transfer the rigatoni mixture to a baking dish and sprinkle grated Parmesan cheese on top.
