Arancini

Method

Arancini Preparation

  1. 1

    Cook the Rice

In a large pot, bring the vegetable broth to a boil. Add the Arborio rice, reduce heat, and simmer until the rice is creamy and cooked, about 20 minutes. Remove from heat and let cool.

  2. 2

    Sauté the Vegetables

In a pan, heat olive oil over medium heat. Sauté the chopped onion and minced garlic until translucent. Stir in the peas and cook for an additional 2-3 minutes.

  3. 3

    Combine Mixture

In a large bowl, combine the cooked rice, sautéed vegetables, Parmesan cheese, diced mozzarella, beaten egg, salt, and black pepper. Mix well.

  4. 4

    Form the Balls

Once the mixture has cooled, form small balls (about 2 inches in diameter) with your hands. Roll each ball in flour, then dip in beaten egg, and finally coat with breadcrumbs.

  5. 5

    Fry the Arancini

In a deep pan, heat olive oil until hot. Fry the arancini in batches until golden brown on all sides. Drain on paper towels.
