Method
Preparing the Sesame Crusted Ahi

In a shallow dish, combine soy sauce, salt, and pepper. Place Ahi tuna steaks in the mixture and marinate for at least 15 minutes.

On a plate, spread out the sesame seeds. Once marinated, press each tuna steak into the sesame seeds to coat both sides.

Cooking the Black Italian Risotto

Stir in Arborio rice and cook for 1-2 minutes until the rice becomes slightly translucent.

Gradually add vegetable broth, one ladle at a time, stirring constantly. Wait until the liquid is mostly absorbed before adding more broth.

After about 18-20 minutes, when the rice is al dente, stir in black squid ink, Parmesan cheese, salt, and pepper. Mix thoroughly to combine and set aside.
Preparing the Asparagus

Preheat oven to 400°F (200°C).

Toss asparagus spears in olive oil, salt, and pepper. Spread them out on a baking sheet.

Roast in the oven for about 10-15 minutes until tender but still crisp.
Making the Wasabi Butter

In a small bowl, combine softened butter, wasabi paste, and lemon juice. Mix until smooth.

Refrigerate until ready to serve.
