Salmon Preparation

    Prepare the Salmon

    Season the salmon fillet with salt and black pepper on both sides.

    Sear the Salmon

    In a skillet, heat the olive oil over medium-high heat. Place the salmon skin-side down and sear for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for an additional 3-4 minutes until the salmon is cooked through. Remove from heat and set aside.

Sun-Dried Tomato Beurre Blanc

    Sauté Shallots and Garlic

    In a saucepan over medium heat, melt 2 tablespoons of butter. Add the chopped shallot and minced garlic, and sauté until soft and fragrant, about 2-3 minutes.

    Deglaze the Pan

    Pour in the white wine (or chicken broth) and bring to a boil. Reduce the heat and let it simmer until reduced by half.

    Finish the Sauce

    Lower the heat and gradually whisk in the remaining butter until melted and the sauce is smooth. Stir in the chopped sun-dried tomatoes, lemon juice, salt, and pepper. Keep warm.

Garlic-Shallot Mashed Potatoes

    Boil the Potatoes

    In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 15-20 minutes.

    Sauté Shallots and Garlic

    In a separate skillet, melt 2 tablespoons of butter over medium heat. Add the minced shallot and garlic, and sauté until fragrant, about 2-3 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the sautéed shallots and garlic, milk, salt, and pepper. Mash until smooth and creamy.

Grilled Asparagus

    Prepare Asparagus

    Wash and trim the asparagus spears. Toss them in olive oil, salt, and black pepper.

    Grill the Asparagus

    Preheat a grill or grill pan over medium heat. Grill the asparagus for about 3-4 minutes, turning occasionally until tender and slightly charred.
