Thinly slice the prime pastrami using a sharp knife. Aim for even slices to ensure a good texture in the sandwich.

Prepare the Swiss cheese by cutting it into slices that fit the ciabatta roll. If you haven't caramelized the onions yet, do so by cooking sliced onions in a skillet over medium-low heat until they are golden brown and sweet, about 20 minutes.

Take the toasted ciabatta roll and spread mustard on both the top and bottom halves. Layer the thinly sliced pastrami on the bottom half, followed by the Swiss cheese slices, and then top with the caramelized onions. Place the top half of the roll on the sandwich to complete it.
