Chicken Marinade

Marinate the Chicken
In a bowl, combine the buttermilk, salt, black pepper, and paprika. Whisk until well combined. Add the chicken breasts and ensure they are fully submerged. Cover and refrigerate for at least 1 hour or overnight for best results.

Prepare the Breading
In a shallow dish, combine the flour, cornstarch, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until evenly distributed.

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Fry the Chicken
Remove the marinated chicken breasts from the buttermilk and allow excess to drip off. Dredge each piece in the flour mixture, ensuring they are coated evenly. Carefully place the chicken in the hot oil and fry for about 6-8 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.

In a small bowl, mix together the mayonnaise, chopped chipotle peppers, and lime juice until smooth and well combined.

Assemble the Sliders
Toast the slider buns lightly. Spread a generous amount of chipotle ranch sauce on each bun. Place a piece of fried chicken on the bottom half of each bun. Top with fried onions and a lettuce leaf, then cover with the top half of the bun. Serve immediately.
