Prepare the Batter
In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the house beer until the batter is smooth and free of lumps.

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

Batter and Fry the Cod
Dip each cod fillet into the batter, allowing any excess to drip off. Carefully place the battered cod into the hot oil and fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

Mix the Vegetables
In a large bowl, combine the shredded green cabbage and carrots.

In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Pour the dressing over the cabbage and carrots, tossing to coat evenly. Refrigerate for at least 30 minutes before serving.

In a bowl, mix together the mayonnaise, chipotle in adobo sauce, lemon juice, and chopped dill pickles.

Add salt and black pepper to taste, adjusting the seasoning as desired. Serve chilled.
