Preparation

    Hard Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot, remove from heat, and let sit for 12-14 minutes.

    Cool and Peel

    After the eggs have rested, transfer them to an ice bath for 5 minutes to cool. Once cooled, gently tap the eggs on a hard surface and peel under running water to make it easier.

Making the Filling

    Prepare the Filling

    Slice the boiled eggs in half lengthwise and gently remove the yolks into a mixing bowl. Add truffle oil, mayonnaise, Dijon mustard, salt, and black pepper to the yolks. Mash and mix until smooth.

    Add Bacon and Herbs

    Fold in the chopped chives and crumbled bacon into the yolk mixture until evenly distributed.

Assembly

    Fill the Egg Whites

    Using a spoon or piping bag, fill the egg whites with the yolk filling.

    Garnish and Serve

    Sprinkle with paprika for garnish. Serve immediately or refrigerate until ready to serve.
