Preheat the Oven
Preheat your oven to 325°F (160°C).

Heat the Cream
In a saucepan over medium heat, combine 2 cups of heavy cream and 1 cup of granulated sugar. Stir gently until the sugar dissolves and the cream is hot but not boiling.

Combine Mixtures
Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to temper the yolks. This will prevent the yolks from cooking.

Strain the Mixture
Pass the mixture through a fine-mesh sieve into a large bowl or measuring cup to remove any cooked egg bits.

Add Water Bath
Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.

Bake in the preheated oven for 30-35 minutes, or until the edges are set but the center is slightly jiggly.

Remove the ramekins from the water bath and let them cool to room temperature. Then refrigerate for at least 2 hours or overnight.

Just before serving, sprinkle 1 tablespoon of granulated sugar evenly over the top of each custard.

Using a kitchen torch, carefully melt the sugar until it bubbles and turns golden brown. If you don’t have a torch, place the ramekins under a broiler for 1-2 minutes, watching closely to prevent burning.
