Fried Calamari

Prepare the Calamari
In a mixing bowl, soak the cleaned calamari rings in buttermilk for at least 30 minutes to tenderize.

Mix Dry Ingredients
In a separate bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Coat the Calamari
Remove the calamari from the buttermilk and let excess drip off. Dredge each ring in the flour mixture, ensuring they are well coated.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the coated calamari rings in batches for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Serve
Serve the fried calamari hot with marinara sauce on the side.

Add Tomatoes and Seasoning
Stir in the crushed tomatoes, oregano, basil, salt, black pepper, and red pepper flakes. Bring to a simmer.

Simmer the Sauce
Let the sauce simmer for 15-20 minutes, stirring occasionally, until it thickens slightly.

Garnish and Serve
Remove the sauce from heat and stir in fresh parsley. Serve warm alongside the fried calamari.
