Bruschetta Toppings

Method

Bruschetta Preparation

  1. 1

    Prepare Heirloom Tomato Topping

Slice the heirloom tomatoes into thin rounds. In a mixing bowl, combine the sliced tomatoes with salt, olive oil, and half of the fresh basil leaves (torn into smaller pieces). Let the mixture sit for 15 minutes to allow the flavors to meld.

  2. 2

    Assemble Burrata Bruschetta

Slice the baguette into 1-inch thick pieces. Toast the slices in an oven or on a grill until golden brown. Top each toasted slice with a generous scoop of burrata cheese, followed by the heirloom tomato mixture. Drizzle with balsamic glaze and garnish with remaining basil leaves.

  3. 3

    Prepare Whipped Ricotta Topping

In a food processor, blend the ricotta cheese until smooth and creamy. Season with salt and pepper to taste. Set aside.

  4. 4

    Assemble Ricotta Bruschetta

Spread the whipped ricotta over another set of toasted baguette slices. Top each with a slice of prosciutto, a dollop of fig jam, and a sprinkle of chopped toasted walnuts.

  5. 5

    Prepare Summer Chicken Salad

In a bowl, combine shredded cooked chicken breast, mixed greens, olive oil, lemon juice, salt, and black pepper. Toss gently until well mixed.

  6. 6

    Assemble Chicken Salad Bruschetta

Top the final set of toasted baguette slices with a generous spoonful of the summer chicken salad mixture. Serve immediately.
