    Cook the Potato

    Peel and dice the medium potato into small cubes. Boil in salted water for about 10-15 minutes or until tender. Drain and set aside.

    Cook the Protein

    Choose your protein (chicken, bacon, sausage, or savory short rib). If using chicken or sausage, cook in a skillet over medium heat until fully cooked, approximately 5-7 minutes. If using bacon, cook until crispy. For short rib, warm up pre-cooked meat in a skillet.

    Prepare the Filling

    In a mixing bowl, combine the cooked potato, cooked protein, and pepper jack cheese. Mix until the cheese is melted and everything is evenly combined.

Assembly

    Assemble the Burrito

    Lay the flour tortilla flat on a clean surface. Spoon the filling mixture into the center of the tortilla. Top with a generous amount of pico de gallo.

    Roll the Burrito

    Fold the sides of the tortilla inward, then roll from the bottom up to form a burrito. Ensure the filling is securely wrapped inside.

    Serve

    Serve the burrito warm, with house made salsa and guacamole on the side, or drizzle them over the top.
