Prepare the Biscuit Dough
In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Do not overmix.

Shape and Bake the Biscuits
Turn the dough onto a floured surface and pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter. Place on a baking sheet lined with parchment paper. Bake at 425°F (220°C) for 15-20 minutes until golden brown.

Cook the Sausage
In a skillet over medium heat, cook the ground sausage until browned and fully cooked, breaking it apart with a spatula.

Sprinkle the flour over the cooked sausage and stir to combine. Gradually add the milk while stirring constantly until the mixture thickens. Season with black pepper and salt to taste. Keep warm.
