Preparing the Eggroll Filling

    Prepare the Ingredients

    Shred the braised beef into small pieces. Finely chop the onion and cilantro. Mince the garlic.

    Mix the Filling

    In a large mixing bowl, combine the shredded beef, chopped onion, chopped cilantro, minced garlic, cumin, chili powder, salt, and pepper. Mix until well combined.

    Wrap the Eggrolls

    Take an eggroll wrapper and place about 2 tablespoons of the beef filling in the center. Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Repeat until all filling is used.

Making the Consommé

    Prepare the Broth

    In a pot, combine the beef broth, dried chili peppers, chopped small onion, minced garlic, and cilantro. Bring to a boil.

    Simmer

    Reduce heat and let it simmer for about 20-25 minutes. Remove the chili peppers and blend the broth until smooth. Adjust salt to taste.

Cooking the Eggrolls

    Fry the Eggrolls

    Heat oil in a deep frying pan over medium heat. Fry the eggrolls in batches until golden brown and crispy, about 3-4 minutes on each side. Drain on paper towels.

Serving

    Plate the Dish

    Serve the eggrolls hot with a bowl of consommé on the side for dipping. Garnish with lime wedges and fresh cilantro.
