Soup Preparation

  1. 1

    Sauté Vegetables

In a large pot, heat a tablespoon of oil over medium heat. Add the diced onion and red bell pepper. Sauté until the onion becomes translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

  2. 2

    Combine Ingredients

Add the rinsed black beans, corn, diced tomatoes (with juices), vegetable broth, cumin, chili powder, salt, and black pepper to the pot. Stir well to combine all the ingredients.

  3. 3

    Simmer the Soup

Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, stirring occasionally. Taste and adjust seasoning if needed.

Serving the Soup

  1. 4

    Add Cheese

Once the soup is ready, ladle it into bowls. Top each bowl with a generous amount of shredded pepperjack cheese and a sprinkle of grated Asiago cheese.

  2. 5

    Garnish

Finish each bowl with a sprinkle of chopped cilantro and serve with a lime wedge on the side for extra flavor.
