    Wash and peel the carrots, then slice them into thin rounds. Remove the seeds from the bell peppers and chop them into bite-sized pieces. Cut the zucchini into half-moons.

    In a large bowl, combine the sliced carrots, chopped bell peppers, and zucchini. Drizzle with olive oil, then sprinkle with salt, black pepper, and garlic powder. Toss until all vegetables are evenly coated.

    Roast the Vegetables

    Preheat your oven to 425°F (220°C). Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the oven for 20-25 minutes, stirring halfway through, until they are tender and slightly caramelized.
