Guacamole

Method

Guacamole Preparation

  1. 1

    Prepare the Avocados

Cut each avocado in half, remove the pit, and scoop the flesh into a large mixing bowl.

  2. 2

    Mash the Avocados

Using a fork or a potato masher, mash the avocados to your desired level of creaminess.

  3. 3

    Add Lime Juice

Pour in the lime juice and mix well to combine. This will help to prevent browning.

  4. 4

    Mix in Vegetables

Add the finely chopped red onion, jalapeño, and cilantro to the avocado mixture. Stir until evenly distributed.

  5. 5

    Season

Sprinkle in salt and black pepper, then mix thoroughly. Taste and adjust seasoning as necessary.

  6. 6

    Serve

Transfer the guacamole to a serving bowl or platter and set aside.

Chip Preparation

  1. 7

    Prepare the Tortillas

Stack the corn tortillas and cut them into triangles, creating chips.

  2. 8

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 9

    Fry the Chips

Carefully add a batch of tortilla triangles to the hot oil, frying them for about 2-3 minutes or until golden brown and crispy.

  4. 10

    Drain and Season

Using a slotted spoon, remove the chips from the oil and transfer them to a paper towel-lined plate to drain excess oil. Sprinkle with salt while still hot.

  5. 11

    Repeat

Continue frying the remaining tortilla chips in batches until all are cooked.

  6. 12

    Serve

Arrange the freshly made tortilla chips on a serving platter alongside the guacamole.
