Preparing the Salmon

Marinate the Salmon
In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over the top. Ensure the fillets are well coated. Cover and refrigerate for at least 30 minutes, allowing the flavors to meld.

Preheat the Grill
While the salmon is marinating, preheat your grill to medium-high heat (about 375°F to 400°F / 190°C to 200°C).

Prepare the Vegetables
Wash and trim the asparagus, remove the seeds from the bell peppers and slice them into strips, and slice the zucchini into rounds or half-moons.

Season the Vegetables
In a large bowl, toss the asparagus, bell peppers, and zucchini with olive oil, salt, and black pepper until evenly coated.

Plate the Dish
Once the salmon and vegetables are done grilling, remove them from the grill and let them rest for a minute. Serve the grilled salmon alongside the grilled seasonal vegetables.
