Method

For the Roast Beef

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Prepare the Sirloin

Rub the sirloin roast with olive oil, then season it generously with salt, black pepper, and garlic powder.

  3. 3

    Roast the Beef

Place the seasoned sirloin in a roasting pan and roast in the preheated oven for about 1 hour or until the internal temperature reaches 130°F (54°C) for medium-rare. Use a meat thermometer for accuracy.

  4. 4

    Rest the Roast

Remove the roast from the oven, cover it with foil, and let it rest for 15 minutes before slicing.

For the Rosemary Au Jus

  1. 5

    Sauté Onions

In a saucepan, add a splash of olive oil and sauté the chopped onion over medium heat until softened, about 5 minutes.

  2. 6

    Add Broth and Herbs

Add the beef broth, soy sauce, Worcestershire sauce, and fresh rosemary to the saucepan. Bring the mixture to a boil.

  3. 7

    Simmer

Reduce the heat and let it simmer for about 15 minutes to allow the flavors to meld. Strain the au jus if desired.

For the Sandwich Assembly

  1. 8

    Slice the Roast

Thinly slice the rested sirloin roast against the grain.

  2. 9

    Prepare the Baguette

Slice the baguettes in half lengthwise. If desired, lightly toast them in the oven or on a grill.

  3. 10

    Assemble the Sandwich

Layer the thinly sliced roast beef on the bottom half of each baguette. Top with Swiss cheese slices and a sprinkle of chopped parsley.

  4. 11

    Serve

Cover with the top half of the baguette. Serve the sandwiches with warm rosemary au jus on the side for dipping.
