Preparing the Fries

    Cut the Potatoes

    Peel the russet potatoes and cut them into thick fries, about 1/4 inch wide.

    Soak the Potatoes

    Place the cut fries into a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the fries and pat them dry with paper towels to ensure they are as dry as possible.

    Heat the Oil

    In a large pot or deep fryer, heat 4 cups of vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the fries in batches to the hot oil and fry for about 5-6 minutes until golden brown. Remove and drain on paper towels, season with salt and pepper.

Preparing the Battered Fish

    Make the Batter

    In a large bowl, mix together 1 cup all-purpose flour, 1 cup cornstarch, 1 tsp baking powder, 1 tsp salt, and 1 tsp black pepper.

    Gradually whisk in 1 cup of cold sparkling water until the batter is smooth and thick.

    Heat the Oil

    In a separate pot or deep fryer, heat 4 cups of vegetable oil to 350°F (175°C).

    Batter the Fish

    Dip each fish fillet into the batter, allowing the excess to drip off.

    Fry the Fish

    Carefully place the battered fish in the hot oil and fry for about 4-5 minutes on each side until golden brown and crispy. Remove and drain on paper towels.

Serving

    Plate the Dish

    Serve the hot battered fish alongside the crispy fries. Optionally, garnish with lemon wedges and tartar sauce.
