    Prepare the Vegetables

    Preheat your oven to 375°F (190°C). Slice the zucchini, eggplant, carrots, red onion, and yellow squash into thin rounds or half-moons. Toss them in a bowl with olive oil, salt, pepper, and Italian seasoning.

    Sauté the Vegetables

    In a large skillet, heat a small amount of olive oil over medium heat. Add the sliced vegetables and sauté for about 5-7 minutes until they start to soften. Remove from heat.

    Layering the Lasagna

    In a baking dish, spread a thin layer of tomato sauce on the bottom. Then, layer half of the sautéed vegetables over the sauce. Crumble half of the goat cheese over the vegetables and sprinkle with 1/3 of the grated Parmesan. Add another layer of tomato sauce.

    Repeat Layers

    Repeat the layering process with the remaining vegetables, goat cheese, and another layer of tomato sauce. Finish with a final layer of tomato sauce topped with the remaining grated Parmesan.

    Bake the Lasagna

    Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden.

    Serve

    Allow the lasagna to cool for 10 minutes before slicing. Serve warm and enjoy your delicious veggie lasagna!
