Preparing the Breakfast Potatoes

    Dice the potatoes into small cubes. In a skillet, heat olive oil over medium heat. Add the potatoes, salt, pepper, and paprika, and cook until golden brown and tender, about 15-20 minutes, stirring occasionally.

    Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes for a runny yolk. Remove with a slotted spoon and drain on paper towels.

    In a separate pan, sauté the fresh spinach over medium heat until just wilted, about 2-3 minutes.
