    In a large pot, bring water to a boil and add the diced potatoes. Cook for about 10 minutes or until just tender. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper. Sauté for about 5 minutes until softened.

    Combine Ingredients

    Add the minced garlic, cooked potatoes, diced smoked brisket, salt, black pepper, and paprika to the skillet. Stir well and cook for an additional 10-15 minutes, stirring occasionally, until the mixture is browned and crispy.

    In a separate pan, fry the eggs to your desired doneness (sunny side up, over easy, etc.).

    Toast the Bread

    While the eggs are cooking, toast the slices of country bread.
