    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat until completely melted. Remove from heat and set aside.

    Prepare the Egg Yolks

    In a heatproof bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and salt until well combined.

    Create a Double Boiler

    Place the bowl over a pot of simmering water, ensuring that the bottom of the bowl doesn't touch the water.

    Whisk and Add Butter

    Whisk the egg yolk mixture continuously while slowly drizzling in the melted butter. Continue whisking until the sauce thickens and becomes creamy.

    Season the Sauce

    Remove from heat and stir in cayenne pepper. Adjust seasoning with additional salt or lemon juice if needed.
