Making the Shrub Syrup

    Prepare the Fruit and Herbs

    In separate bowls, mash the blueberries, blackberries, strawberries, and grapefruit. For each flavor, add the corresponding herbs (sage for blueberry, mint for blackberry, ginger for grapefruit, rosemary for strawberry).

    Combine with Sugar and Water

    In a saucepan, combine the mashed fruit and herbs with sugar and water. Heat over medium until the sugar dissolves and the mixture simmers. Let it simmer for about 10 minutes.

    Cool and Strain

    Remove from heat and let the mixture cool. Once cooled, strain through a fine mesh sieve to remove solids. You should have a vibrant syrup.

    Store the Syrup

    Transfer the shrub syrup to a clean bottle and refrigerate. It can be stored for up to 2 weeks.

Serving the Drink
