1. Make the Shrub
In a medium saucepan, combine the fresh fruit, sugar, and water. Cook over medium heat, stirring until the sugar dissolves. Bring to a simmer and let it cook for 10 minutes, mashing the fruit to release its juices.
2. Remove from heat and let the mixture cool. Once cooled, strain the mixture through a fine mesh sieve into a bowl, pressing the solids to extract as much liquid as possible.
3. Add the apple cider vinegar to the strained liquid and stir well. Transfer the shrub mixture to a clean glass jar and refrigerate for at least 24 hours to allow the flavors to meld.
