    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak Potatoes

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This helps them become crispier.

    Dry and Fry

    Drain and pat the fries dry with paper towels. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes per batch.

    Seasoning

    Remove fries from the oil and drain on paper towels. While still hot, drizzle with truffle oil, sprinkle with grated Parmesan, parsley, and thyme. Toss to coat evenly.
