Prepare the Potatoes
Peel and cut the potatoes into thick strips. Soak them in cold water for at least 30 minutes to remove excess starch.

Make the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until smooth.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked potatoes and pat them dry. Fry them in batches for about 5-7 minutes or until golden brown. Remove and drain on paper towels.

Fry the Cod
Dip the cod fillets into the batter, allowing excess batter to drip off. Carefully place the battered fish into the hot oil and fry for 4-5 minutes on each side until golden and crispy. Remove and drain on paper towels.

Serve
Serve the fish and chips hot with house-made tartar sauce and pickled red onion on the side.
